My pick of 5 healthy Mexican recipes to keep the calories off for the Summer plus they are vegetarian too...

 I love Mexican food, but all that cheese and sauce you feel stuffed after one course. So, I wanted to look for healthy alternatives. I tried out the Tacos for dinner tonight and they were great.
